Creation of the Péguanéigra art workshop


Péguanéigra is a space of freedom and rebirth that redefines the concept of enterprise. We are dedicated to a different way of doing business, one that is inclusive, responsible and creative, one that values differences. In collaboration with artist Marco Rossi, author of the De André effigy in Genoa, we carry out social inclusion projects for asylum seekers and people in difficulty.


But Péguanéigra is much more than a social carpentry or art workshop. We are pioneers in thinking outside the box, challenging conventions and creating unique works. We reject the idea of conventional beauty, always seeking new perspectives and emotions.

Corzetti mould


These moulds are handmade from wood and are suitable for the preparation of 'Corzetti', an ancient Ligurian pasta. The flower decoration prepares the pasta to better accommodate the sauce.


How to prepare Corzetti

To prepare corzetti, spread the flour on a pastry board, creating the typical fountain shape. Warm the water and add it a little at a time, together with our Delicate Extra Virgin Olive Oil. As you add the water, start mixing the ingredients together with the help of a fork first and then your hands.


Knead until the dough is smooth and soft. Lightly flour the work surface and roll out the corzetti dough with the help of a rolling pin. The thickness should be about 1mm.


Cut out the corzetti using the typical wooden mould: first cut the dough and then lightly press the circle inside the press with the spiral on one side and the coat of arms on the other. If you don't have a mould for corzetti, you can cut the dough using a circular pastry cutter.


Cook the Ligurian corzetti in plenty of salted water for one minute and drain.


Mix the Carli Walnut Sauce with the cooking water from the pasta and season the Ligurian corzetti. Serve with a few chopped walnut kernels as decoration.
